Oca (Oxalis tuberosa)
The oca is a perennial plant from the the Andes, it is cultivated as an annual here It is sometimes called Yam It is from the oxalis family
ROTATIONIt is grown in the root vegetable bed or in the leaf vegetable bed.
CULTIVATIONBy planting tubers or cuttings in March and April. Transplantation of cuttings is made during May.

ADVICEEarth up in September and harvest when the stems have passed the first frost, but before the really cold weather arrives. The tubers are cooked like potatoes before being eaten, but they don't take as long to cook. |
